Alphonso (Hapus) mangoes, also known as the King of Fruits in India, comprise the most popular variety of mangos grown in the country. Although there are many species and varieties of mangoes grown in India, alphonsos are huge fruit with sweet yellow flesh given a greenish tinge when fully ripe - and they have an ambrosial taste unrivaled by other mango varieties.
There are two main types of mangoes: the 'Kesar' and the 'Alphonso'. The two varieties are very similar in terms of flavor but the flesh of the Alphonso variety is a beautiful reddish-orange color. Unripe mangoes have an astringent flavor that, ironically, is quite a mouthful on its own—unlike honey.
